Recipe: Game Fish Skewers

Cubed Swordf or Tuna |

Red Onion Pieces 1 inch in size |

Red or Yellow Pepper Pieces 1 inch in size |

Soy Sauce |
¼ Cup |
Fresh Basil Chopped |

Minced Garlic |

Balsamic Vinegar |

Dijon Mustard |

Bamboo or Metal Skewers |

 Combine oil, soy, basil, garlic, vinegar and dijon in a bowl and mix. If using bamboo, soak skewers in water for 30 minutes. Marinate fish in mixture for 30 minutes. Skewer fish and vegetables; alternating onion, pepper, fish cube...until there are 3 pieces of fish and two pieces of pepper and onion on each skewer. Skewers should be grilled, rotating to prevent over-cooking. Use remaining marinade to baste skewers while turning. Cook to desired tenderness... |
