Recipe: Game Fish Skewers


Cubed Swordf or Tuna 1oz-1LB
Red Onion Pieces 1 inch in size 8 PCS
Red or Yellow Pepper Pieces 1 inch in size 8 PCS
Olive Oil ¼ Cup
Soy Sauce ¼ Cup
Fresh Basil Chopped 1tblspn
Minced Garlic 1 tspn
Balsamic Vinegar ¼ Cup
Dijon Mustard 1tblspn
Bamboo or Metal Skewers about 4

Combine oil, soy, basil, garlic, vinegar and dijon in a bowl and mix.
If using bamboo, soak skewers in water for 30 minutes. Marinate fish in mixture for 30 minutes. Skewer fish and vegetables; alternating onion, pepper, fish cube...until there are 3 pieces of fish and two pieces of pepper and onion on each skewer. Skewers should be grilled, rotating to prevent over-cooking. Use remaining marinade to baste skewers while turning. Cook to desired tenderness...
